Tarquinia preserves a deep and genuine culinary tradition, and we wish to think they came to us from the Etruscans age.
A kitchen that has preserved the flavors of the past, simple but at the same time tasty, enriched by the aromas of the bush that enhance the flavors of food, such as fresh fennel, juniper berries, bay leaves and rosemary or spices like cinnamon or pepper. Acquacotta is the first traditional dish of Tarquinia born to meet the needs of farmers and butteri of the Maremma, is a vegetable soup and potatoes lying on slices of homemade bread, flavored with garlic, onion, tomato and oil with egg added. There are many varieties of this dish but the main characteristic is to be cooked with seasonal vegetables often harvested in the ditches or in the vegetable garden

Second courses are mainly based on bushmeat and fish. The most known are based on lamb and wild boar that are cooked in various ways, the beans with pork rinds, the artichokes “alla giudia”, the borage fritters, the omelettes with wild asparagus and mushrooms … Everything is accompanied by the tasty local wine, suitable for all types of menus. The ferlengo mushroom is the king of the bush around tarquinia, served: roasted, fried, sautéed in a pan with fennel, boiled with polenta, with bean soup, with white and red sauce, with pasta and risotto, raw into salads, with acquacotta or with other vegetables. The new oil in Tarquinia is an extraordinary product, excellent for its sweet taste, balanced and with a low degree of acidity. Alongside the production of old mills, we note also the production of several small producers. Even today you can taste ricotta, “giucata” and “caciotta”, produced by shepherds in isolated farms scattered throughout the territory. The typical pastry is very simple and follows the religious ritual festivities; is worthy of being tasted with the classic “pampepati”, the Easter pizza, the “frittelle di San Giuseppe”, the “tozzetti”, cantucci with honey …
